Chick-Fil-A Biscuits….. that is what Joshua said he wanted for lunch. Well since we are half a world away from the nearest Chick-Fil-A that sounded impossible. Then I thought about it a bit and realised that I had all of the makings for a chicken biscuit right here in our little kitchen.
I make buttermilk biscuits quite a bit here in England. The bacon rashers here are very nice to place on a hot buttermilk biscuit and have for breakfast. People here call that a bacon buttie or a bacon sarnee……which is just a bacon sandwich.
I quickly popped some biscuits in the little cooker. Biscuits here are cookies but these were southern buttermilk biscuits.
Here is the recipe the I have used for years. I find it easier to make these if you have a handheld pastry blender.
2 Cups of All Purpose Flour
1 TBSP of baking powder
1 TBSP of Sugar
1 tsp of salt
mix these together then cut in
1\2 cup of very cold butter cut into cubes
when butter is mostly cut into the dry mix stir in
1 Cup of Buttermilk
form into a ball and roll out on a lightly floured surface. Fold and roll about 10 times. Leave dough about 1 inch thick. Cut with a glass tumbler.
Bake in a preheated oven at 425 degrees F. 210 C for about 10 minutes.
A taste similar to home. A taste we have missed. I love this little cooker in my English kitchen. It was a fun lunch.
